Make your own homemade vegetable cubes to improve the taste of vegetables in your meals
Ingredients
Fresh vegetables of your choice.
It is good to always have carrots, celery and onion. Some extra ideas of vegetables are asparagus, leeks and peppers
1 bunch of fresh herbs like dill, parsley and fennel with basil or mint
A little garlic
Salt and pepper
Procedure
Wash vegetables and cut them into large pieces.
Then put them in a saucepan with water just enough to cover them.
Add to the saucepan a bunch of fresh herbs, garlic, salt and pepper.
Allow to boil for 40 minutes, until tender. Once cooked, remove vegetables using a slotted spoon, pass them through the mill or multi to mash them and then return them into the saucepan.
Mix and allow to boil until the mixture has become thick.
Once the mixture has cooled down to room temperature, pour into ice trays and place in freezer where you can keep for up to 1 month.
Extra tips!
You can make cubes using herbs, which can be used in numerous dishes. One idea is to use ½ bunch sage, ½ bunch marjoram, ½ bunch mint and 1 litre of water. Follow the same procedure as before and place them in cool bags with ice cubes and then freeze.
You can also make a delicious soup in no time using the cubes you made. In boiling water add the diced vegetables, olive oil, salt and pepper. Then add 1tbsp yogurt on your plate.
